Avo and Chocolate Mousse

I do love a rich chocolate mousse from time to time. You can keep its smoothness and richness by using a blended ripe avocado instead of whipped egg whites with lots of sugar. With these mousses, I chose to use 80% cocoa Dark Chocolate which may pack a bit of a bitter bite for some!

If you prefer something less dark and rich, depending on your palate, then you can always choose to use more Milk Chocolate than Dark Chocolate. Agave or maple syrup is a great alternative to refined sugars if you still need more sweetness. These avocado and chocolate mousses are perfect for dinner parties, special occasions and easy to make with children too!

You will need: 

  • 1 Large Ripe Avocado
  • 80g Dark Chocolate
  • 60g Milk Chocolate
  • 2 Tablespoons of Unsweetened Cocoa Powder
  • ½ Cup Almond Milk
  • 1 teaspoon Vanilla Extract
  • A sprinkle of salt
  • 1 tablespoon of maple syrup
Method:
  1. Break up the pieces of chocolate into a bowl and microwave for 2 minutes. Take out and stir and then microwave again for 30 seconds. Put aside.
  2. Scoop one ripe avocado into a blender, add the melted chocolate, cocoa powder, vanilla essence, almond milk and blitz.
  3. Sprinkle in some salt and add the maple syrup and fold.
  4.  Scoop the mousse into four separate bowls and garnish with a fruit of your choice – some good options are raspberries, pomegranate seeds or even some grated white chocolate for extra indulgence!
  5.  Chill for 2 hours or overnight and serve or if you just can't wait then serve straight away!
