Pap Spice Chicken

This is another ridiculously simple recipe when you can’t be bothered to concoct elaborate meals. It’s a quick, wholesome and ultra-nutritious meal fix. The name is odd and I am aware – couldn’t think of anything else and decided to use the names of the prime spices in this recipe. 

 

If you’re looking to make this vegetarian, then substitute the chicken with cottage cheese and cook for 10-15mins on low to medium heat.

Time : 30 mins

You will need :

  • 2 x 200-250g skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 1 heaped tbsp. paprika
  • 1 heaped tbsp. ground allspice
  • 1 tbsp Moroccan dried herbs and spices (available in most large supermarkets)
  To make :  

1)With a sharp knife make tiny insertions all over the chicken breasts

2)In small bow, mix the olive oil, Moroccan spices, paprika and allspice into a paste. Rub this paste into the chicken breasts. Leave for a few minutes or marinate overnight to allow the flavours to infuse into the meat

3)In a skillet cook the meat periodically turning over to the other side. Use tsp of water to sprinkle over the meat which allows for it to be cooked through and through. Cooking time takes anywhere from 20-30 minutes depending upon your pan and heat

4)Slice the meat into strips and serve with green veggies. Simple isn’t it ?!
