Peppers & Mince

I love mince beef. It’s delicious and very easy to cook and the lean variety is very nutritious. Not quite sure how this recipe came about – I took inspiration from another recipe which used cumin, cayenne pepper and garlic and sort of just developed on it. Tastes ok to me and I imagine it will to you too 🙂

Time : 20 mins

You will need :

  • 1 small red onion sliced
  • 1 medium to large green pepper
  • 300g of minced beef
  • 2 tsp ground cumin
  • 1 large clove garlic diced
  • 1 ½ tsp curry powder
  • 1 tsp garam masala
  • ½ tsp cayenne pepper
  • 1 ½ tbsp. of dried coriander (use fresh if you can – I just found this easier)
  • 1-2 small red chilies (depending on your palate)
  • 100g of choice mushrooms sliced
  • 1 tsp of salt (can add more depending on taste)
  • ½ tbsp. of coconut sugar
  • ½ tbsp. of coconut oil

  To make :  

1)Slice up your green pepper into thin long strips

2)In a large bowl first dry mix the cumin, curry powder, garam masala, cayenne pepper, coriander, salt and sugar. Mix well !

3)To the mixture of spices and flavors add the mince beef and mix well ensuring that the flavors coat all the beef. Leave the mince in the bowl to stand for a few minutes

4)In a pan, heat the coconut oil. Once hot stir fry the garlic and sliced onion. Let both of them brown all over

5)To the onions and garlic add the beef mince and sliced mushrooms with all the spices and herbs. Cook through well till the beef is browned all over

6)To the beef and mushrooms add the green pepper along with the red chilies. Stir fry and cook till the peppers soften slightly but retain some amount of crunch.

To eat, try adding a baked sweet potato or some grilled asparagus.
