Speedy Fajita

My favorite cuisine EVER has to be Mexican! I just love the flavors and the cheese and the salsa and cheese and guacamole and, did I mention cheese 😉 ? Jokes aside, I’m always up for fajitas any day and in keeping with the theme of RYE, here is my super-easy, ultra-healthy way to enjoy chicken fajitas. A speedy yet supremely satisfying meal !

You will need :  

  • 2 skinless chicken breasts
  • 1 tbsp diced garlic
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp coconut sugar
  • ½ tsp chilli powder
  • juice of ½ a clementine orange
  • 1 large onion finely sliced
  • 1 orange pepper and 1 yellow pepper
  • 1 sweet potato medium sized
    To make :

1)Break open your sharp kitchen scissors and snip the chicken breasts into thin strips in a large bowl. To the chicken strips add the garlic, 1 tbsp of olive oil, cumin, oregano, chilli powder, coconut sugar, salt and orange juice (gives it such a lovely subtle flavor). Mix well and leave the chicken aside to marinate

2)Whilst the chicken absorbs the Mexican flavors, using a knife prong your washed sweet potato several times and pop into your microwave. 5 minutes on full power on both sides (total 10minutes)

3)With your sweet potato and chicken taken care of temporarily, turn your attention to the peppers and slice into strips

4)In a skillet heat 1 tbsp of olive oil. Fry the onions till they’re soft and golden brown. Takes about 5 minutes.

5)Add sliced peppers into the skillet and stir-fry for 2-3 minutes.

6)Remove peppers and onion and set aside in a bowl. To the same skillet, add the marinated chicken strips and cook through. This takes anywhere from 5-7 minutes depending on the heat. Once the chicken is cooked, add the onions and peppers and stir-fry-mix for a minute. Remove from heat

7)Your sweet potato after it’s microwave stint will be to a soft mashable consistency. In a bowl with a large spoon, mash! (you don’t have to mash it and can eat the sweet potato as a baked side)

EAT ! (add some fresh salad leaves to give your plate a balance of nutrients and color).
