Strawberry O’Coco Protein Squares

I’ve been wanting to make these for a while now… The inspiration came from a cocktail drink I had in a restaurant where strawberries and coconut were the star ingredients. The two compliment each other most beautifully and I just had to use them in my next experiment. That being said, I have to admit a massive kitchen disaster in that I forgot to put the oven timer on the first time around; I made my own coal as a result!

I like to keep a stock of healthy snacky bites in my fridge for when I’m feeling peckish but not ravenous enough to warrant a full meal. These squares provide a packing full of good fats, a decent amount of protein and next-to-nothing sugar. Did I mention they’re simply DELICIOUS? 😉

You will need :  

  • 3 cups of rolled organic oats
  • 1 cup fresh grated coconut
  • 250g freshly sliced strawberries
  • ½ cup of seed mix – flaxseed, pumpkin seeds and sunflower seeds (easily available in large supermarkets and organic stores)
  • 1 tbsp ground cinnamon
  • 2 tsp salt
  • 100g or 1 cup of strawberry protein powder (I use Athlete’s Fitness Protein Powder as it’s low-cal and has a low whey content)
  • 2 ½ cups of almond milk
  • 2 large eggs
  • 1 tbsp of vanilla essence

** If you would like to use chocolate protein powder instead that’s perfectly fine too. You can continue using Coconut or throw in toasted crushed hazelnuts instead of the coconut   To make :  

1)Preheat your over to 350F or 175 degrees Celsius

2)In a large mixing bowl, mix the oats, grated coconut, seed mix, cinnamon, salt and protein powder.

3)In a large measuring jug, measure out the almond milk. To this add the vanilla essence and the eggs. Stir thoroughly well to combine and then drop in the sliced strawberries too into the liquid mixture.

4)Pour the liquid mix of strawberries-milk-eggs-essence over the dry ingredient mix in the bowl. Manually fold and ensure the batter is well combined and all aspects evenly coated.

5)Transfer the batter into a 9x9 inch square pan, which has been greased. Pop into the pre-heated oven and bake for 40 minutes.

6)Cut into 25 square pieces and store in an air-tight container in your fridge. Don’t forget to share :-)
